Delicious, simple, and the perfect compliment to a cup of coffee or tea, these three-ingredient butter cookies are a yummy treat that will undoubtedly put a smile on your face.

Bake Time: 18-22 minutes
Total Time: 28-37 minutes (plus time to cool)
Ingredients:
1c unsalted butter, softened
1c powdered sugar
2c all-purpose flour
1tsp vanilla extract (optional)
Instructions:
Preheat oven to 350 degrees
In a large mixing bowl, cream together butter, powdered sugar, and vanilla (optional) until smooth, light, and fluffy. If using a stand mixer, be sure to scrape the sides to get everything incorporated.
Slowly add flour (on low speed if using a stand mixer). Mixture will be crumbly to begin, but will come together as ingredients are thoroughly combined.
The dough should be soft enough to pipe (with a little effort) should you choose. If not, add 1tbsp melted butter to dough to soften enough to pipe.
If not piping, break off equal pieces of dough, roll into balls and flatten into discs. The flatter they are, the crispier the cookies will be.
Place cookies 1 inch apart on a parchment lined baking sheet and chill in the fridge for 30 minutes prior to baking.
Place cookies in oven (middle rack) and bake for 18-22 minutes, depending on oven. Mine typically bake for about 20 minutes.
Cool thoroughly before enjoying.
Store in an air-tight container and enjoy within 7 days.
