Hearty, comforting, and packed full of flavor – Zuppa Toscana is the perfect soup when it’s cold and dreary outside. Many of the ingredients listed can be made from scratch ahead of time, or choose your favorite store brands.

Total Time: 4.25 – 5.25 hours
Ingredients:
48oz low-sodium chicken stock
1lb ground, mild (or hot) Italian sausage
1/2 pound thick cut bacon
1 small yellow onion, finely diced
2tbsp minced garlic (measure with your heart here, though)
3/4c heavy whipping cream
2c washed, roughly chopped kale (your favorite variety)
16oz gnocchi
Instructions:
Cook ground Italian sausage and drain. Set aside.
Cook bacon until crisp, pat dry, crumble, and set aside.
In a crock pot, add chicken stock, diced onion, minced garlic, cooked sausage, and cooked bacon.
Cook on low for 4 hours.
30 minutes before serving, add heavy whipping cream and kale.
Cook on high for 30 minutes.
5-10 minutes before serving, add gnocchi and cook gnocchi are tender.
Serve with bread and enjoy!
